Regent’s Punch Rooibos Vanilla Mocktail

Steeped with fragrant citrus rind and cinnamon, the sweet, smooth and nutty flavours of Tetley Rooibos Vanilla tea become a golden, aromatic base for this bright and spritzy mocktail.

Ingredients

  • 1 lemon
  • 2 oranges, divided
  • 4 tea bags - Tetley Rooibos Vanilla
  • 1 cinnamon stick
  • 3 tbsp (45 mL) honey
  • 4 cups (1 L) ice
  • 2 cups (500 mL) non-alcoholic sparkling white wine

Directions

  1. In small saucepan set over medium heat, boil 2 cups (500 mL) water.
  2. Meanwhile, using vegetable peeler, peel strips from the lemon and from 1 orange, carefully avoiding the bitter pith underneath and reserving juices.
  3. Add Tetley Vanilla Rooibos tea bags to boiling water. Stir in lemon strips, orange strips and cinnamon stick. Remove from heat and stir in honey and reserved juices from the peeled lemon and orange. Let cool completely.
  4. Meanwhile, cut remaining whole orange into half-moon slices and transfer to a large pitcher or punch bowl filled with ice.
  5. Strain the tea mixture into pitcher and stir. Top with non-alcoholic sparkling wine; stir gently. Serve immediately.

  • Substitute honey for maple syrup or agave syrup, if desired.
